Vegan Scalloped Potatoes | easy recipe!
Today we are making vegan scalloped potatoes! The perfect creamy, l cheesy side dish for any holiday dinner. Get the recipe below and don't forget to check out my cookbook here: https://itslivb.com/cookbook ♡Recipe: 1 onion, finely chopped 4 lbs potatoes, thinly sliced 1/3 cup vegan butter 1/3 cup all-purpose flour 1-1/2 cups nondairy milk 2 cups vegan chicken broth (or vegetable broth) 1/4 cup nutritional yeast 1 tsp salt black pepper to taste paprika (optional to sprinkle overtop) 1 cup vegan cheese, for sprinkling on top Preheat oven to 375 F. 1. In a pot on medium heat, cook the onions in a drizzle of oil until translucent. 2. Add onions and potatoes to a greased baking pan and stir to combine. 3. Place the pot back on the stove and add the vegan butter. Heat on medium heat until melted. Sprinkle the flour overtop, then whisk to combine. let it cook for about 30 seconds to get rid of the raw flour taste. 4. Slowly add splashed of nondairy milk, whisking until smooth each time to create a thick sauce. Repeat with the broth. 5. Add the salt, nutritional yeast and pepper and whisk to combine. Then pour over the potatoes, using a spoon to smooth out the top and allow the sauce to get through the cracks to the bottom. Sprinkle with paprika (if using). 6. Bake for 45 minutes. Then, add the cheese and bake another 15 minutes until melted and bubbling. 7. Kick back and enjoy the BEST vegan popcorn, a creamy vegan spinach artichoke dip AND these insanely delicious peanut butter protein cookies! BEST VEGAN POPCORN ◇ 1/4 cup nutritional yeast ◇ 1/2 teaspoon each of salt, smoked paprika and pepper 1 tablespoon coconut oil 1/3 cup popcorn Add all the ingredients (minus popcorn) into a large bowl. Pop the popcorn in an air popper or on the stove and add to the bowl. Toss together and enjoy! SPINACH ARTICHOKE DIP: https://www.simplyquinoa.com/vegan-spinach-artichoke-dip/ PEANUT BUTTER PROTEIN COOKIES: ◇ 3/4 cup creamy peanut butter ◇ 1/2 cup coconut sugar ◇ 1 scoop vegan protein powder (flavor of choice) ◇ 1/2 teaspoon sea salt ◇ 1/2 teaspoon baking soda ◇ 1 flax egg (1 tbsp flax + 3 tbsp water) ◇ 1/3 cup vegan chocolate chips Preheat oven to 350ºF. Beat together the peanut butter and sugar in a large bowl until creamy. Beat in protein powder, sea salt and baking powder. Add flax egg (if mixture seems too dry) and beat until combined. Fold in chocolate chips. Form dough into balls and place on a parchment-lined baking sheet. Flatten with a fork and bake for 10 minutes. Vegan Berry Yoghurt Parfait half cup (100g) soy yoghurt (I use Sojade) half cup frozen berries (here blueberries) 1/4 cup water 2 tbsp chia seeds Blend this all, then as extra : 2 kiwis, 1 tbsp sunflower, 1 tbsp pumpkin seeds, 1 tbsp hemp seeds, some oats, 1 tsp natural peanut butter Total protein for recipe : 15g (checked on cronometer) 2. Cacao Protein Bars 1/2 cup pitted dates 1/2 cup chickpeas 1 tbsp chia seeds 2 tbsp cacao powder 1 tbsp almond butter (add tbsp water if your dates are too dry) Just blend everything together and roll into balls or cut into bars! Total protein for recipe : 16g 3. Vegan Rillettes Spread 1+1/3 cup (180g) cooked green lentils 1/2 cup (50g) walnuts (toasted for 5 minutes at 200C) 1 red onion, mince and cooked till soft 1 tbsp flax seeds 1 tsp paprika 2 tbsp lemon juice 2 tbsp (but would recommend 1) tamari pepper Blend all things together but not too much! leave chunks and enjoy!
