3 Vegan Holiday Appetizers | Artichoke Dip | Vegan Spanakopita | Mushroom Crostini | The Edgy Veg
In today's Episode of The Edgy Veg Candice is going to show you how to make 3 easy last minute vegan appetizers that are so good you won't even want to save any for your guests. Start by cutting a baguette into equal sized slices. Put those right on your oven rack, or a baking sheet if you prefer. Brush them each with a fair amount of Olive Oil on both sides and then toast them for 5 minutes. Put your chopped mushrooms onto a baking sheet, spread them evenly, and then douse them with extra-virgin olive oil. Sprinkle a layer of parsley over them and then top that off with a bit more olive oil. Mix all that together well and roast it for 20 minutes. Place your sliced baguettes on your serving platter and top them each with a layer of cashew cream cheese. Add 4 to 5 roasted mushrooms on top of each of these and sprinkle a bit of sea salt on them for good measure. Lastly, garnish them with parsley and serve. The second appetizer is a Spanakopita. This is essentially spinach and cheese wrapped in pastry. To make this you will add 1 1/2 cups of cashew cream cheese to your food processor. Also add in 1/4 cup of pine nuts, a clove of garlic and 2 cups of frozen spinach and then blend well. Once that's complete set it aside and lay out your vegan phyllo pastry as seen in the video and brush it evenly with olive oil. Cut it into 3 equal sized strips horizontally and put a good sized spoonful of your spinach filler at the end of each one. Referring to the video for guidance you will now simply roll each strip up into a big pastry triangle. Brush these with olive oil and bake them on a parchment lined baking sheet for 10-15 minutes or until the sides become somewhat browned. Let them cool for just a bit and then serve. The last appetizer on the list is Candice's Creamy Vegan Artichoke Dip. Add 1 cup of cashews to your blender, followed by a 1/4 of nutritional yeast, a tsp of garlic powder, 1/4 cup of water, and then blend well. After blending add just a bit more water to the mixture as seen in the video. Set that aside. In a food processor combine 2 cups of artichoke hearts, cashew cream, 1/2 tsp of salt, 1 jalapeno, 1 tsp of garlic powder, and pulse. You will continue pulsing until you reach a consistency similar to what you see in the video and then put your newly created concoction into a serving bowl. Garnish that with parsley and serve with a side of toasted baguettes or your favorite healthy chips. Now you have 3 easy vegan appetizers to serve your guests or to satiate those late night snack cravings that you know you're going to have during your next Netflix bender. Like what you see here? Lettuce Vegan mayonnaise for spreading - Store remaining tofu salad in airtight container in fridge for 2-3 days CHICKPEA PUMPKIN SMASH SANDWICH Bake the pumpkin when cooking the falafels. Bake at 200degrees celsius for 20 minutes or until soft. Today I’m sharing 5 vegan appetizers/entrées recipes great for Christmas diner as well as any other special (or not) occasion! They’re also really good as snack and most of them take little to no time to make, so let’s get started ?! ZUCCHINI ROSES/ROLL Take one or 2 zucchinis and use a peeler or cheese grater to make beautiful slices, then spread your vegan cheese all over. Then roll the slice and arrange in a bowl! So simple yet delicious and a great a healthy snack too! Recipe for vegan cheese spread : https://www.youtube.com/watch?v=orlDYXW3spA&t=4s 2. AVOCADO DELIGHT (makes 6) Place few cubes of vegan pain d’épices ‘gingerbread’ in small glass. Mousse : to a blender, add 2 ripe avocado, 1/3 long cucumber, 10/15 mint leaves, juice of 1 lime. Blend, and add it, top with black sesame Recipe pain d’epices : https://www.youtube.com/watch?v=d2aJ4IMleSc 3. MICROWAVE CHIPS Choose your veggies (I used potatoes, sweet, purple, normal and carrot). Make very very thin slices. Add wraping paper to a plate so it’s a very flat surface, spread oil over and add your slices, add oil again, add salt, herbs, whatever you want. Cook 4.30 min in the microwave and then let dry for 30sec! 4. EGGPLANT DIP You will need 1 to 2 eggplants. Cut in slices dispose on towel paper. Add salt to remove excess water for about 10 minutes. Rince off salt, and pat dry again. Then place on aluminium foil and grill for 7 minutes on each side. Alternatively, you want to “burn” your eggplant with a flame so you get a great smoky flavour. Then, remove the skin. Sauté 2 onions, garlic, cumin, tandoori, lime juice, water, small can of tomatoes. Add eggplant flesh and tomatoes to the blender. Add 1 tsp cornstarch (maizena), more spices if you want. Blend, eat like that (with coriander) or add ½ cup plant-based milk, blend, cook on stove for 2-3 minutes. Add fresh coriander, All done! 5. VEGAN BLINIS (for about 20) 120g flour 2.25 tsp sugar 5.5 ‘baking powder’ (half paquet) 135 ml soy milk 45 ml soy cream 1 tsp apple cider vinegar pinch of salt Mix dry ingredient, add wet, whisk, add vinegar. Cook like pancakes, wait for the bubbles to come, and flip, cook another 1 or 2 minutes. I like to store blinis in a dishcloths and wait until its time to eat so they are still warm. I topped mine with hummus, rocket and cranberries ! Plant-based Asian Spring Rolls: Learn how to prepare low-fat, gluten-free vegan appetizer
Asian Spring Rolls These healthy spring rolls are a crowd pleaser served as an appetizer, side dish or an entree. They are wonderful for entertaining. She is a very talented cook and she and her husband are the passionate force behind the film Plant Pure Nation that you can watch on Netflix. I highly recommend their wonderful PlantPure Frozen entrees in a variety of places including Amazon. Consider doubling or tripling the peanut sauce and enjoying it over a salad or a buddha bowl with a grain, legume and vegetables. It is really delicious. Kim Campbell's Asian Spring Rolls Ingredients Dipping Sauce 2 tablespoons natural creamy peanut butter no added oils or sugar 2 tablespoons rice vinegar 2 teaspoons agave nectar 1/2 teaspoon red pepper flakes 2 tablespoons water Veggie Filling 1 1/2 ounce bean thread noodles uncooked 1 tablespoon tahini 1 dash red pepper flakes 1/2 medium cucumber julienned 1 medium carrot shredded 1/2 red bell pepper seeded and thinly sliced 1 avocado, pitted and thinly sliced 2 green onions sliced 1/2 tablespoon rice vinegar 1/2 teaspoon agave nectar 1 tablespoon lime juice 8 rice paper wrappers 8 romaine leaves small and whole 2 tablespoons cilantro leaves 3 tablespoons mint leaves Instructions To make the sauce, combine the peanut butter, rice vinegar, agave, red pepper flakes and water in a small bowl. Mix well and set aside. To make the filling, cook the bean thread noodles according to the package directions. Drain the noodles, put them in a bowl, and toss with the tahini and a dash of red pepper flakes. Combine the cucumber, carrot, bell pepper, avocado, and green onions in a large bowl. Toss the veggies with the rice vinegar, agave and lime juice. To soften the rice wrappers, place hot water in a cake pan or large bowl. Immerse each wrapper in the hot water until it softens about 10 seconds. Place the wet wrapper on a plate or clean countertop. Fill the center of the softened wrapper by laying down one small romaine leaf. Then lay down 1-2 tablespoons of noodles and a small amount of the veggie mixture. Add cilantro and mint leaves. To roll up your rice wrappers, first fold in the right and then left side over the filling. Then fold the bottom up towards the top until closed and snug. Continue the process with each of the wrappers. As you finish each roll place it on a baking sheet covered with a damp paper towel. Cover the rolls with another damp paper towel. These will keep in the fridge for a day or so. If desired, slice each roll in half with a sharp knife, or serve the rolls whole with peanut sauce on the side.
