5 Minute Snack Ideas for Students! (vegan)

Hi hello and welcome. Today I bring to you a bunch of 5 MINUTE vegan snack ideas - Many of which are by the lovely people in the comment section. A single serving mug pancake, a tasty japanese cucumber salad, a healthy and cozy apple punch, black bean corn cakes and so much more! Perfect for study breaks or even while you study haha

#1 Apple Nachos

1 apple, cut into thin slices
a squeeze of fresh lemon juice
a handful of granola and/or whole wheat cereal
a small handful of dark chocolate chips
a pinch of cinnamon
1 tbsp peanut butter

serves 1

#2 Sunomono - ”Noodle” Salad

1 cucumber, cut into noodles
2 tbsp rice vinegar
2 tsp rice syrup or 1 1/2 tsp sugar
2 tsp soy sauce
1/4 tsp chili flakes
1 tsp toasted sesame seeds
salt to taste

serves 1-2

#3 Healthy Orange Chocolate

1 orange
a dust of cinnamon
a dust of unsweetened cocoa powder

#4 Apricots and Peanut Butter

Dried Apricots
Peanut Butter

#5 Mug Pancake

1/3 cup of all purpose flour (40g)
1/2 tsp baking powder
a pinch of salt
1 tbsp of sugar

1 1/2 tbsp unsweetened apple sauce
1/4 tsp vanilla
1/2 tsp apple cider vinegar
3 tbsp non dairy milk

coconut oil for the greasing

toppings of choice like maple syrup, vegan butter, berries, nut butter etc.

- make sure your mug is oven proof and able to hold at least 160ml (⅔ cup)
- the applesauce can be subbed for 1 flax egg (1 tbsp semi ground flax seeds + 2 tbsp water → letting that sit for ~ 10 min, and the person who tested this recipe with the flax egg added 3 1/4 tbsp non dairy milk instead of only 3 tbsp)
- I baked it for 20 min @180C and then for 2-3 min @210C to get that nice golden brown top → check after 18-20 min if yours needs to go longer with the higher temp, ovens can vary
from what the testers on instagram said, try baking it for 1:45-2:00 min at 700-800 watt

#6 Crunchy Coconut Chocolate Trail Mix

a handful of your favorite healthy cereal
a small handful of dried fruit of choice, like cranberries or raisins
~ 1 tbsp dark chocolate chips or cocoa nibs
a small handful of raw or roasted almonds
a small handful of coconut chips

1 serving as a snack or 2-3 if you use it as a smoothie topping

#7 Vegan Feta and Plum Toast

1 English muffin
vegan feta (i recommend Bedda or Violife)
plum jam
i think some arugula would go nice here as well, quite a fancy weird toast

#8 Apple and Fennel Punch

⅔ cup fennel tea (160ml)
⅓ cup apple juice (80ml)

serves 1

# 9 Black Bean Corn Cakes

½ cup black beans (120g)
~ 2 tbsp ketchup
salt, pepper to taste
if needed: a splash of water to adjust the consistency
2-3 corn or rice cakes or crackers or toast
½ avocado
a squeeze of lemon juice
a pinch of both salt and chili flakes

serves 1-2 as a snack or 1 as a small meal (sub the rice or corn cakes for bread and you’ve got yourself a little meal)
